Vinification Grapes harvesting in September, vinification by soft pressing of the grapes, cold settling, fermentation in stainless steel tank and aging in oak barrels from Allier (30 hl) for 18 months. In-bottle refinement for at least 6 months.

TASTING NOTES
Color pale yellow with good intensity, quite intense and clear
Aroma complex, excellent finesse
Description floral (wildflowers, chamomile, acacia, light honey), fuity (peach, apple), spicy (light cinnamon, vanilla, with a final “fumè” note), herbaceous (delicate mint, aromatic herbs and fresh hay)
Taste good freshness and softness, sapid, quite warm. Well balanced, excellent intensity and persistence
Pairings excellent with hot and cold seafood appetizers (with or without tomato), with a preference for carpaccio and tartare of tuna, swordfish or shrimp. It goes well with pasta stuffed with monkfish and herbs or else crepe stuffed with salted coldfish with roasted tomatoes and olives. In the end it can be concluded with a baked turbot with potatoes, thyme and marjoram. The wine also combines well with a white meat menù with mushrooms or truffles.
